Just because I think they're interesting I have some books to highlight:
Guide to Rocky Mountain vegetable gardening, by Robert Gough & Cheryl Moore-Gough. 9481591864578
It's a very comprehensive guide to what you need to know for planting in high altitude and clay-ish soil. It includes tips on what is toxic to animals and when to cover your crop with manure. Also, there are very useful planting & harvesting charts.
The Kind Diet: a simple guide to feeling great, losing weight, and saving the planet, by Alicia Silverstone.
Actress turned PETA activist, Silverstone provides some creative recipes in this compilation. Apparently, most of the recipes were pulled from various vegan and vegetarian resources. Silverstone adds her commentary about things like "Nasty Food" and how to get proper protein in your diet. She seems well versed in the topic.
