Morrocan Couscous and changed opinions

Yummy!  I made this last night, following the recipe from Silverstone's "The Kind Diet."  I was surprised how much we loved it.  Even Ben ate some, because we looked like we were enjoying it so much.  When dinner started he made ick faces and chose to have a hamburger.   I was glad to see him give it a try.

Once again, I found a terriffic way to stay vegetarian on a week night.  My original opinions about the diet book by a celebrity are dashed.   You can read more about Silverstone's path at: http://www.thekindlife.com/

The Klier fam. is not going vegan... by any means... but the least we could do would be to cut out a lot of our dependence on meat as a main course.   My husband is always open to this, but he gets tired of tofu dishes. Ben LOVES tofu.... especially Aunt Kimberly's recipe.  If she is kind enough, maybe she'll allow me to reprint it.  It involves frying extra firm tofu in coconut milk, some sesame oil and a small amount coconut oil.   I throw some kikkoman "Stir Fry Sauce" on top and serve over steamed veggies and brown rice.   I admit the sauce is a little half-assed, but it is sufficient for now until I master the recipe.  I think I've posted it before.  Let's see if I can find it.....

  • Coconut Stir-fry 
  • 1 lb of Extra Firm Tofu, cubed
  • 1/2 can Lite Coconut milk
  • 1 inch finger of ginger, grated
  • 4 cloves of garlic, diced.
  • 2 TBSP Sesame Oil
  • 1 bag of frozen stir fry veggies
  • 1 TBSP soy sauce 
  • Using a non-stick pan, pour 1/2" of coconut milk, ginger, and garlic. Heat at Medium and add tofu. Cook, stirring as occasionally until tofu is covered and the coconut milk has been absorbed by the tofu. Add oil, turn heat up to medium-high. Turn tofu occasionally, it takes about 3-5 minutes to get a good crisp. Meanwhile, steam veggies in microwave with soy sauce. Once tofu is crispy good, add veggies and remaining coconut milk and cook together for a few minutes.
  • Serve over quinoa, barley, or rice.
